I have resigned from my company & they are insisting that I have to pay for the cost of training that the company took me on & that I didn't sign for.

There's also another course that I attended which I did sign for, but they want to recover the full cost from me & I have already worked for 6 months since that training - training was relevant to my job. Shouldn't the cost be pro rata-d?

you don't have to pay them anything. at the end of the day it was their prerogative to send you on these courses.
do not feel obliged.
